My Journey to
40 Kilos
Life threw some heavy curveballs my way, and grief deeply affected my relationship with food. I spent years caring for everyone around me while putting myself last, and over time my health suffered.
One day, I stepped on the scales and saw 99.9kg. I told my trainer and friend Lauren, I will never see 100. That moment changed everything. I looked at my nieces, who looked up to me, and knew I wanted to be a stronger, healthier role model. I wanted a long, active, happy life.
So I made a change. Over the next five years, through consistency, learning about nutrition, and creating meals I loved, I lost 40 kilos. The journey was never linear, but it was worth every step.
In 2025, I began sharing my recipes and journey online. What started with one viral lunchbox video has now grown into the Eat With Jo community of over 5,000 members. What began as weight loss became so much more, healing, purpose, and helping others create healthier lives too.
The Philosophy
Healthy eating shouldn’t feel like a chore or a restriction. My 80/20 philosophy is built on the belief that 80% of the time, we fuel our bodies with wholesome, nutrient-dense whole foods that make us feel incredible.
The other 20%? That’s for the soul. It’s for the shared desserts, the spontaneous pizza nights, and the meals that bring joy without the labels of 'good' or 'bad.' This isn't a diet, it's a sustainable way of living that actually lasts.
